What is UHT milk? and why is UHT milk more healthy than regular milk?

UHT is short for both ultra high temperature processing and ultra heat treatment. UHT is the process of partial sterilization of food by heating it for 1-2 seconds at high temperature such as 135°C (275°F). This temperature of UHT heating is chosen because it is the temperature required to kill spores in milk. UHT milk has more nutrients than milk found commonly in the US because the high temperature treatment reduces the processing time of the milk. Less processing time means less destruction of nutrients.

Why is UHT unpopular in the US?

In the US, American people do not like the idea of drinking milk that has been warmed or heated. Sales of UHT milk, therefore, has not been high. Nowadays, it is impossible to find UHT milk in American grocery stores. However, many milk products in the US are made using UHT milk. UHT milk is popular among food manufacturers. Americans are happy to consume UHT milk or UHT milk products providing they do not know that it's UHT milk they are consuming. UHT milk is also used by airlines.
